Lecturer of the Department of Agricultural Technology Unib Encourages KWT to Sustence Together to Process Coconut Water Waste to Become Nata de Coco

Lecturers of the Department of Agricultural Technology, Faculty of Agriculture, University of Bengkulu (Unib) carried out a Community Service activity entitled “Innovation in Processing Coconut Water Waste into Nata de Coco as a Functional Food Product” with the Women Farmers Group (KWT) Rezeki Bersama in Beringin Raya Village, Muara Bangkahulu District, Bengkulu City. The activity, which was held on July 12, 2026, aimed to improve the knowledge and skills of the community in utilizing coconut water that has not been optimally utilized into value-added food products. The activity was carried out by Fitri Yuwita S, S.TP., MP, Sri Wulandari, S.TP., M.Sc., and Ulfah Anis, S.T.P., M.Sc.

Through this activity, the lecturer team provided socialization, counseling, training, and assistance to members of KWT Rezeki Bersama. Participants received training on the stages of making Nata de Coco, starting from the preparation of raw materials, media sterilization, nutritional formulation using sugar and ZA, inoculation of Acetobacter xylinum bacteria, fermentation process, to hygienic processing and packaging. The activity was carried out in a participatory manner so that KWT members were directly involved in each stage of practice and gained experience in applying coconut water treatment technology.

The results of the activity show that KWT Rezeki Bersama has been able to produce Nata de Coco that is ready to be marketed. This achievement is a form of successful technology transfer from universities to the community. The partner also expressed its commitment to continue production independently after the activity is completed. The sustainability of the program is supported by the availability of coconut water raw materials and production equipment that has been donated to partners, so that the technology provided is expected to continue to be utilized and developed into business opportunities.

In the future, the service team will encourage product development through improving packaging design, assisting in the management of PIRT permits, and strengthening digital marketing strategies. These efforts are expected to increase competitiveness and expand the Nata de Coco market produced by KWT Rezeki Bersama. This activity is also a form of contribution by lecturers of the Department of Agricultural Technology Unib in encouraging the sustainable use of coconut waste and creating environmental, social, and economic benefits for the people of Beringin Raya Village.
